Radish Soup


Ingredients
5 cups chicken stock (see our Chicken Stock recipe)
¼ cup rice or balsamic vinegar
2 tablespoons sugar
a pinch of cayenne pepper
a pinch ground (dried) ginger
1 pound raw shrimp, peeled and deveined
1½ cups radishes, sliced
1½ cups spinach leaves, thinly sliced
1 cup green onions, chopped

In a Dutch oven medium heat, bring stock to a boil. Add vinegar, sugar, cayenne and ginger. Add shrimp and cook until shrimp become pink. Turn off heat, stir in radishes, spinach and green onions. Cover and let stand 2-3 minutes before serving.

Serves 4
