Lobster Soup

Ingredients
6 tablespoons butter
6 tablespoons all-purpose flour
1 ½ cups chicken stock (see our recipe for Chicken Stock)
2 ½ cups lobster meat
4 ½ cups milk
1 ½ cups onion, chopped
1 stock celery, sliced
1 ½ teaspoons fresh parsley, chopped
salt and freshly ground black pepper to taste
¾ cup half and half

1. In a Dutch oven, melt butter and stir in flour, salt, and pepper.  Slowly stir in milk and chicken stock.  Add celery, onion, parsley and lobster meat.  Cook over medium heat for about 10 minutes.
2. Add half and half, reheat and season to taste.  Serve.

Serves approx 6
