Okra Soup I

Ingredients:
2 pound young Okra pods
4 large tomatoes
2 cup corn
4 cups chicken or beef stock (see our recipes)
4 slices bacon
2 lemon.
Salt and freshly ground pepper to taste

1. Cut off the ends of Okra pods. Cut the pods into thin rounds. Peel the tomatoes after putting them in hot water for a minute. Seed and chop the tomatoes. Dice the bacon. Fry until crisp. Boil the corn until soft. Place all the ingredients in a Dutch oven and bring to boil. Reduce the heat and simmer for about 15 minutes.

Serves 8
NOTE: The fat from the bacon will enhance the soup’s flavour if used.
