Mushroom Soup III (Clear)

Ingredients:
6 cups Chicken stock (see our chicken stock recipe)
12 or more fresh mushrooms, sliced
6 Green onions, chopped
2 tablespoon Dry sherry
2 teaspoon Light miso

1. In a Dutch oven, heat stock, add mushrooms and onions and simmer 3-4 minutes to soften vegetables.
2. Add sherry. Mix 3 tablespoons of the stock with miso to blend. Add miso to soup mixture. Cook 3 minutes; serve hot. 

Serves 6

About Miso:
Miso is soy bean paste, which is an essential condiment in Japanese cooking. Miso is made by fermenting soy beans with salt and koji. Koji are cultured grains such as rice, barley, and soy beans.
