Pimento Soup


Ingredients
2 4 ounce jar pimentos, undrained
4 tablespoons butter
5 tablespoons flour
4 cups chicken stock (see our Chicken Stock recipe)
3 cups half-and-half
4 teaspoons onions, minced
Salt and freshly ground pepper to taste
½ teaspoon hot sauce (like Tabasco)
sour cream (optional)

1. Place pimentos into blender and process until smooth. Put pimento aside.
2. In a Dutch oven melt butter over low heat; add flour and stir until flour mixture is smooth. Cook 1 minute, stirring all the time.
3. Gradually add chicken stock and half-and-half to flour mixture, and cook over medium heat, stirring all the time, until stock mixture is thickened.
4. Stir in pimento, onion, salt, and hot sauce; cook over low heat, stirring all the time until heated.
5. Garnish with sour cream, if desired.

Serves approx 8
