1/2 pound almonds
8 cups milk
1 tablespoon butter mixed with a tablespoon flour
Salt to taste
Dash of cayenne
Croutons (optional)
1. Blanch almonds and brown in the oven; while crisp and hot, crush to a powder with a rolling pin.
2. In a Dutch oven, scald milk and add butter mixed with the flour and the almonds.
Cook about five minutes.
Add salt and cayenne to taste. Serve hot (with croutons if desired).
